There’s a moment in the morning, standing at the Chicago River at Michigan & Wacker, when the city is still waking up and the light is doing something remarkable. Michigan & Wacker the coffee has that same quality - quiet, bright, and worth paying attention to.
This light roast leads with cashew - smooth, soft, gently nutty. Then lemonade-bright citrus arrives, the kind of acidity that’s clean and alive rather than sharp or sour. Floral tones and a soft honeyed warmth fill out the middle, and black tea brings a refined, slightly tannic finish that lingers cleanly.
High acidity, clean body, complex without being difficult. This is specialty coffee the way it’s supposed to taste - like the bean itself has something to say, before the roast gets involved. Best brewed as pour over or filter, where the subtlety has room to open up.
