The Number That Actually Tells You How Fresh Your Coffee Is

Most coffee bags have a "best by" date on them. It's usually 9–12 months from the roast date. What it tells you: this coffee won't make you sick before this date. What it doesn't tell you: when the coffee was roasted, how long it sat in a warehouse, or whether it tastes like anything.


The roast date is the number that actually matters. Here's why.


What Happens to Coffee After Roasting

When coffee is roasted, it undergoes a chemical transformation. Hundreds of compounds develop - the ones responsible for aroma, sweetness, acidity, and complexity. The roasting process also produces CO₂, which gets trapped inside the bean.


That CO₂ is your freshness indicator. For the first 4–14 days after roasting, the bean is still off-gassing CO₂ - which is why freshly roasted coffee blooms when you pour hot water over it. The bloom is CO₂ releasing. It also means the bean is still alive, in a sense. Peak flavor is typically between day 5 and day 30 after roasting.


After about 4–6 weeks, most of the CO₂ has dissipated. With no CO₂ to protect the bean, the oils on its surface begin to oxidize. Oxidized coffee goes flat first - the aroma fades, the complexity disappears. Then it goes stale. Then it tastes bitter and harsh.


None of this is captured by a "best by" date 12 months out.


Why Most Bags Don't Show the Roast Date

The short answer: it's not in their interest to show it.


Large-scale commercial roasters roast in bulk and distribute through retail channels that can take weeks or months. By the time a bag of coffee reaches a grocery store shelf, it might already be 3–4 months past the roast date. A "best by" date set 12 months out gives the product shelf life. A roast date would tell you the coffee is already stale.


Specialty roasters who sell direct - online or at farmers markets - have less to hide. If you're shipping coffee within days of roasting, you put the roast date on the bag because it's a selling point, not a liability.


How to Read a Coffee Bag

Good signs:

  • Roast date clearly printed (not just "best by")

  • Roast date is recent - ideally within 2–4 weeks of when you're buying

  • One-way valve on the bag (CO₂ releases out; oxygen can't get in)

  • Whole beans (more surface area exposed once ground)


Warning signs:

  • Only "best by" date, no roast date

  • "Best by" date more than 6 months away - means it was roasted long ago

  • Pre-ground in a non-airtight package

  • No information about when or where it was roasted
